  1. Make dough (10 mins): Standard samosa dough, rest 25 mins.
  2. Dry roast spices (3 mins, medium heat): In dry pan, roast cumin, coriander, fennel seeds for 2 mins until fragrant. Coarsely crush with mortar-pestle.
  3. Assemble (15 mins): Roll, cut, form cones, fill with 1 tbsp filling, seal edges tight.
  4. Fry (15 mins, low-medium heat): Oil 325°F. Fry 5 at time, 10-12 mins low heat, 2-3 mins medium heat until golden crisp.
