👩‍🍳 How to make Sooji Halwa

  1. Heat ghee to 170°C in pan
  2. Add semolina, roast 8-10 minutes on medium heat (170°C)
  3. Stir constantly, semolina should turn golden, release sweet aroma
  4. Add almonds, cashews, toast 1 minute
  5. Boil water (95°C) with sugar separately
  6. Slowly add hot sugar water to roasted semolina
  7. Stir immediately (careful: may splutter)
  8. Add crushed cardamom
  9. Reduce to low heat (150°C), cook 8-10 minutes until water absorbs
  10. Fold in raisins in final 1 minute
  11. Visual: thick, creamy pudding; light golden color
  12. Check: no liquid should remain, grains should be soft
  13. Serve warm at 60°C
