👩🍳 How to make Sooji Halwa
- Heat ghee to 170°C in pan
- Add semolina, roast 8-10 minutes on medium heat (170°C)
- Stir constantly, semolina should turn golden, release sweet aroma
- Add almonds, cashews, toast 1 minute
- Boil water (95°C) with sugar separately
- Slowly add hot sugar water to roasted semolina
- Stir immediately (careful: may splutter)
- Add crushed cardamom
- Reduce to low heat (150°C), cook 8-10 minutes until water absorbs
- Fold in raisins in final 1 minute
- Visual: thick, creamy pudding; light golden color
- Check: no liquid should remain, grains should be soft
- Serve warm at 60°C
