  1. Make dough (10 mins): Mix flour, baking powder, salt. Add ¼ cup ghee, rub until breadcrumbs. Add ¼ cup water, knead soft dough. Rest 10 mins covered.
  2. Roll puris (10 mins): Roll dough thin (⅛ inch). Cut into ½-inch squares using knife (about 24-30 pieces).
  3. Deep fry (10 mins, medium heat): Heat oil to 350°F (175°C). Fry puris in batches 5-6 mins, stirring constantly—puris should puff, turn golden, crispy. Drain on paper towels.
  4. Make syrup (3 mins, medium heat): In pan, combine ¾ cup sugar, ¼ cup water. Heat 2-3 mins, stirring until sugar dissolves, syrup coats spoon—single thread consistency.
  5. Coat with sugar (2 mins): Immediately add fried puris to warm syrup. Stir gently 1-2 mins—puris get coated with sugar syrup. Transfer to plate, allow to cool—shakarpare becomes crunchier as it cools.
  6. Store: Airtight, lasts 1-2 weeks.
