👩‍🍳 How to make Rewri

  1. Roast sesame (5 mins, medium-low heat): In pan, toast sesame seeds 4-5 mins, stirring constantly, until golden, aromatic.
  2. Grease pan (1 min): Prepare shallow pan or foil with ½ tsp ghee.
  3. Melt jaggery (4 mins, medium-high heat): Heat ½ cup jaggery, ½ tbsp ghee. Stir until jaggery melts, browns (4 mins). Test hard-crack stage with cold water drop.
  4. Mix (1 min): Add sesame, salt. Stir rapidly 10-15 secs.
  5. Set (1 min): Pour onto greased pan, flatten, cool 5 mins until hard.
  6. Store: Airtight container, lasts 1-2 weeks.
