👩🍳 How to make Ras Malai
- Syrup: Dissolve sugar (300g) in water (500ml) over high heat (200°C). Add cardamom (3g) and saffron (8 strands). Simmer 5 minutes, keep warm.
- Ras Malai: Mix milk powder (100g), all-purpose flour (20g). Add ghee (30ml) and milk (50ml), knead gently until soft dough forms.
- Divide into 8 balls, flatten each into a disc (2 inches diameter, 1/2 inch thick).
- Bring water (1 liter) with baking soda (1 tsp) to boil in a wide pan over high heat (200°C).
- Gently place ras malai discs into boiling water. They will sink initially, then float to surface after 1-2 minutes.
- Once floating, boil for another 2-3 minutes until they become soft and spongy. Remove with slotted spoon, place in warm sugar syrup.
- Malai: Heat milk (500ml) in a pan over medium heat (160°C). Reduce by half (about 250ml remains) over 15-20 minutes, stirring occasionally.
- Let cool slightly, add condensed milk (150ml), cream (100ml), cardamom (2g), nutmeg (pinch). Mix well.
- Let soak for at least 2 hours, preferably overnight in refrigerator for best flavor.
- Garnish with chopped dry fruits (40g). Serve chilled.
