  1. Heat milk to 95°C in wide, heavy-bottom pan
  2. Reduce heat to 140°C (low-medium)
  3. Stir occasionally, cook 30-35 minutes
  4. Watch for cream (malai) forming on surface
  5. As cream forms every 5 minutes, fold gently back into milk
  6. Milk should reduce to 1/3 of original volume
  7. Add sugar, stir well, cook 5 more minutes
  8. Add crushed cardamom, saffron strands
  9. Add nuts and raisins, cook 2 minutes
  10. Remove from heat, add rose water and ghee
  11. Stir gently, cool to 60°C
  12. Visual: thick, creamy pudding with visible cream layers; Aroma: cardamom, ghee dominant
  13. Serve warm or chilled
