👩🍳 How to make Rabri
- Heat milk to 95°C in wide, heavy-bottom pan
- Reduce heat to 140°C (low-medium)
- Stir occasionally, cook 30-35 minutes
- Watch for cream (malai) forming on surface
- As cream forms every 5 minutes, fold gently back into milk
- Milk should reduce to 1/3 of original volume
- Add sugar, stir well, cook 5 more minutes
- Add crushed cardamom, saffron strands
- Add nuts and raisins, cook 2 minutes
- Remove from heat, add rose water and ghee
- Stir gently, cool to 60°C
- Visual: thick, creamy pudding with visible cream layers; Aroma: cardamom, ghee dominant
- Serve warm or chilled
