- Boil and peel potatoes (8 mins, high heat): Boil small potatoes 6-8 minutes until just tender (not fully cooked), drain, cool, peel.
- Heat oil (1 min, medium heat): Add cumin seeds, allow to splutter.
- Sauté onion (3 mins, medium heat): Add sliced onion, cook until deep golden (high heat fries out moisture).
- Add aromatics (1 min, medium heat): Add ginger, garlic, green chillies, cook briefly.
- Add tomato (2 mins, medium heat): Add tomatoes, cook until soft and broken down.
- Add spices (1 min, medium heat): Add turmeric, chilli powder, garam masala, amchur, salt, mix well.
- Add potatoes (1 min, medium heat): Add parboiled potatoes carefully, stir to coat with spice mixture.
- Dum cook (8-10 mins, low-medium heat): Add 1 cup water, cover with lid, cook on low-medium heat until potatoes are tender and gravy reduces to semi-thick consistency (dum = cooking in steam).
- Finish (1 min, room temp): Stir in coriander leaves, adjust seasoning.
