  1. Make dough (10 mins): Mix flours, salt. Add 1 tbsp oil, rub breadcrumb texture. Add water gradually, knead into soft, slightly stiff dough (stiffer than roti dough). Rest 15-20 mins covered.
  2. Shape puris (10 mins): Divide into 16 portions. Roll each into thin 3-4 inch circle (uniform thickness important for even puffing).
  3. Deep fry (2 mins per puri, medium-high heat): Heat oil to 350°F (175°C). Gently slide puri into oil. Within 1-2 secs, it will puff dramatically. Fry 10-15 secs on one side, flip. Fry other side 10-15 secs until light golden. Remove with spoon.
  4. Drain (2 mins): Place on paper towels. Puris crisp as they cool.
  5. Serve: Serve hot with aloo subzi (potato curry), chickpea curry, or sweet jaggary.
