  1. Prepare yogurt (1 min): If curd is too liquid, drain excess water through muslin cloth. Curd should be thick, creamy.
  2. Crush cardamom (2 mins): If using green cardamom pods, lightly crush with mortar-pestle. Remove seeds from husks, grind to fine powder (or use pre-made cardamom powder).
  3. Make lassi (5 mins): In blender, add 2 cups thick chilled yogurt. Add 1 cup cold water or milk. Add 4-5 tbsp sugar (adjust sweetness). Add 1 tsp cardamom powder, saffron strands (if using), pinch of salt.
  4. Blend (3 mins): Blend on high speed for 2-3 mins until frothy, smooth. Foam should form on top—this is traditional (indicates good blending).
  5. Serve (2 mins): Pour into tall glasses. Top with foam. Add ice cubes if desired. Garnish with chopped nuts, saffron strand, cardamom powder sprinkle.
  6. Serve immediately: Best served immediately while cold and frothy.
