👩🍳 How to make Punjabi Aloo Kulcha
- Make dough (10 mins): Mix flour, baking powder, baking soda, sugar, salt. Add yogurt, 2 tbsp ghee. Add water gradually, knead into soft dough. Rest 30 mins covered.
- Make filling (5 mins): Combine grated potatoes, onion, spices (chili, cumin, coriander, garam masala, ajwain), mango powder, salts, ginger, green chilies, coriander. Mix thoroughly.
- Stuff kulchas (15 mins): Divide dough into 10 portions. Roll one ball into thin oval (6-inch). Place 2 tbsp filling on one half, fold over into triangle. Seal edges. Brush water on top, sprinkle kalonji, sesame seeds.
- Serve: Brush generous ghee on both sides. Serve hot.
