👩‍🍳 How to make Pista Barfi

  1. Blanch & powder pistachios (10 mins): Soak pistachios in hot water, remove red skin, dry completely, then grind into fine powder (visual cue: smooth green-tinged powder, no coarse pieces).
  2. Make syrup (3 mins, high heat): Dissolve sugar in water, bring to rapid boil (visual cue: sugar dissolves, bubbles form, syrup boils).
  3. Add pistachio powder (4 mins, medium heat): Add pistachio powder to boiling syrup. Cook for 4 minutes while stirring constantly until thickened (visual cue: mixture becomes thick, green color develops, mixture becomes dense).
  4. Finish (3 mins, low heat): Add ghee and cardamom powder. Continue cooking for 3 minutes until mixture leaves pan sides (visual cue: mixture becomes very thick, pulls away from pan, becomes aromatic).
  5. Set (30 mins): Transfer to greased pan, press firmly. Add saffron and pistachio slivers on top. Cool 30 minutes to 1 hour until firm.
  6. Cut (3 mins): Cut into 16 pieces using greased knife (visual cue: clean cuts, firm texture, green color visible).
