👩‍🍳 How to make Pinni

  1. Roast flour (8 mins, medium-low heat): Heat ½ cup ghee in pan. Add 1 cup wheat flour, roast 6-8 mins, stirring constantly—flour should be light golden, aromatic. Cool 1 min.
  2. Add gond (2 mins): Add ¼ cup dried gond (broken into small pieces), mix well for 1 min—gond will start to absorb ghee, soften.
  3. Add jaggery (5 mins, medium heat): Add ½ cup jaggery (grated), cook 3-4 mins on medium heat, stirring. Jaggery melts, blends with flour-ghee mixture.
  4. Add nuts & dried fruits (2 mins): Fold in cashews, almonds, raisins, cardamom powder, salt gently.
  5. Set (5 mins): Transfer to greased pan or plate. Cool 10-15 mins. Can be cut into pieces or eaten as is (pinni is traditionally crumbly, not formed into balls).
  6. Serve: Traditionally eaten with a spoon, pieces stuck together with ghee.
