👩‍🍳 How to make Peda

  1. Heat ghee to 160°C in heavy-bottom pan
  2. Add khoya, stir continuously 8 minutes at medium heat
  3. Khoya should turn slightly darker
  4. Add condensed milk, stir for 12 minutes on low heat (150°C)
  5. Mixture should thicken and leave pan sides when lifted
  6. Check consistency: at 110°C on candy thermometer (soft ball)
  7. Remove from heat, cool 3 minutes
  8. Add cardamom powder, rose water
  9. Mix well, cool to room temperature
  10. Take 20ml mixture, roll into smooth oval balls
  11. Flatten slightly to peda shape (traditional)
  12. Place on parchment paper
  13. Decorate with almond pieces and silver leaf
  14. Visual: smooth, fudgy, glossy surface
  15. Set 1 hour at room temperature
  16. Store in airtight container
