👩🍳 How to make Peda
- Heat ghee to 160°C in heavy-bottom pan
- Add khoya, stir continuously 8 minutes at medium heat
- Khoya should turn slightly darker
- Add condensed milk, stir for 12 minutes on low heat (150°C)
- Mixture should thicken and leave pan sides when lifted
- Check consistency: at 110°C on candy thermometer (soft ball)
- Remove from heat, cool 3 minutes
- Add cardamom powder, rose water
- Mix well, cool to room temperature
- Take 20ml mixture, roll into smooth oval balls
- Flatten slightly to peda shape (traditional)
- Place on parchment paper
- Decorate with almond pieces and silver leaf
- Visual: smooth, fudgy, glossy surface
- Set 1 hour at room temperature
- Store in airtight container
