  1. Heat ghee to 170°C in pan
  2. Add vermicelli, roast 4 minutes stirring constantly
  3. Vermicelli should turn golden-brown, release aroma
  4. Add water, bring to boil (95°C)
  5. Cook 5-6 minutes until water absorbs
  6. Add milk, bring to boil again
  7. Reduce to low heat (140°C), cook 10-12 minutes
  8. Stir occasionally to prevent sticking
  9. Add sugar, cardamom powder
  10. Cook 3 more minutes
  11. Fold in nuts and raisins in final 1 minute
  12. Visual: thick, creamy pudding; Aroma: ghee, cardamom, roasted vermicelli
  13. Remove from heat, cool to 60°C
  14. Serve warm
