👩🍳 How to make Payasam
- Heat ghee to 170°C in pan
- Add vermicelli, roast 4 minutes stirring constantly
- Vermicelli should turn golden-brown, release aroma
- Add water, bring to boil (95°C)
- Cook 5-6 minutes until water absorbs
- Add milk, bring to boil again
- Reduce to low heat (140°C), cook 10-12 minutes
- Stir occasionally to prevent sticking
- Add sugar, cardamom powder
- Cook 3 more minutes
- Fold in nuts and raisins in final 1 minute
- Visual: thick, creamy pudding; Aroma: ghee, cardamom, roasted vermicelli
- Remove from heat, cool to 60°C
- Serve warm
