👩‍🍳 How to make Paneer Tikka Masala

  1. Paneer Tikka: Mix yogurt (100ml), ginger-garlic paste (20g), red chili powder (4g), turmeric (1g), lemon juice (20ml), salt (6g), and garam masala (2g).
  2. Add paneer cubes (400g), coat evenly. Marinate in refrigerator for at least 2 hours.
  3. Thread marinated paneer alternately with onion chunks (100g) and green bell pepper pieces (100g) onto skewers.
  4. Heat oil (20ml) in a grill pan or cast-iron skillet over high heat (210°C) until very hot.
  5. Place paneer skewers on grill, cook 3-4 minutes per side until charred at edges. Set aside.
  6. Masala: Heat oil (35ml) in a large pan over medium-high heat (190°C). Add chopped onions (180g), cook 5 minutes until softened and edges turn golden-brown.
  7. Add minced ginger (15g) and garlic (10g), cook 1 minute until fragrant.
  8. Add crushed tomatoes (300g), cook 5 minutes until broken down and oil separates.
  9. Add coriander powder (7g), turmeric (2g), red chili powder (3g), garam masala (4g). Stir for 1 minute.
  10. Add water (250ml), bring to a simmer over medium heat (160°C). Simmer for 8 minutes.
  11. Reduce heat to low (130°C). Add butter (45g) and cream (120ml), stir until smooth.
  12. Gently add grilled paneer tikka, stir carefully to avoid breaking pieces.
  13. Simmer for 3 minutes. Add salt (9g).
  14. Gravy should be creamy and coat a spoon. Consistency is thick but pourable.
  15. Garnish with coriander leaves (15g). Serve hot with naan or rice.
