👩‍🍳 How to make Paneer Tikka Masala

  1. Tikka: Mix yogurt (100ml), ginger-garlic paste (20g), red chili powder (4g), turmeric (1g), lemon juice (20ml), salt (6g), garam masala (2g).
  2. Add paneer cubes (400g), coat evenly. Marinate 2+ hours.
  3. Thread paneer alternately with onion and pepper chunks onto skewers.
  4. Heat oil (20ml) in grill pan over high heat (210°C).
  5. Grill skewers 3-4 minutes per side until charred. Set aside.
  6. Masala: Heat oil (35ml) in large pan over medium-high heat (190°C). Add onions (180g), cook 5 minutes until golden-brown.
  7. Add ginger (15g) and garlic (10g), cook 1 minute until fragrant.
  8. Add tomatoes (300g), cook 5 minutes until broken down and oil separates.
  9. Add coriander powder (7g), turmeric (2g), red chili powder (3g), garam masala (4g), stir 1 minute.
  10. Add water (250ml), simmer 8 minutes over medium heat (160°C).
  11. Reduce to low (130°C), add butter (45g) and cream (120ml), stir until smooth.
  12. Gently add grilled paneer tikka, fold carefully to coat.
  13. Simmer 3 minutes. Add salt (9g).
  14. Gravy should be creamy and coat a spoon.
  15. Garnish with coriander leaves (15g). Serve hot with naan or rice.
