👩🍳 How to make Paneer Tikka Masala
- Tikka: Mix yogurt (100ml), ginger-garlic paste (20g), red chili powder (4g), turmeric (1g), lemon juice (20ml), salt (6g), garam masala (2g).
- Add paneer cubes (400g), coat evenly. Marinate 2+ hours.
- Thread paneer alternately with onion and pepper chunks onto skewers.
- Heat oil (20ml) in grill pan over high heat (210°C).
- Grill skewers 3-4 minutes per side until charred. Set aside.
- Masala: Heat oil (35ml) in large pan over medium-high heat (190°C). Add onions (180g), cook 5 minutes until golden-brown.
- Add ginger (15g) and garlic (10g), cook 1 minute until fragrant.
- Add tomatoes (300g), cook 5 minutes until broken down and oil separates.
- Add coriander powder (7g), turmeric (2g), red chili powder (3g), garam masala (4g), stir 1 minute.
- Add water (250ml), simmer 8 minutes over medium heat (160°C).
- Reduce to low (130°C), add butter (45g) and cream (120ml), stir until smooth.
- Gently add grilled paneer tikka, fold carefully to coat.
- Simmer 3 minutes. Add salt (9g).
- Gravy should be creamy and coat a spoon.
- Garnish with coriander leaves (15g). Serve hot with naan or rice.
