  1. Prepare dough (10 mins): Follow samosa dough method. Rest 25 mins.
  2. Make paneer filling (5 mins): Combine crumbled paneer, onion, green chilies, ginger paste. Add chili powder, cumin, asafoetida, coriander, mango powder. Mix until even, no lumps.
  3. Fill and seal (15 mins): Roll, cut, form cones, fill with 1 tbsp paneer mixture, seal edges tightly.
  4. Deep fry (15 mins, low-medium heat): Oil 325°F (160°C). Fry 5 at a time, 10-12 mins low heat until light golden, pastry puffed. Increase heat to medium, fry 2-3 mins until crispy, deep gold. Check no oil seeps.
