👩‍🍳 How to make Paneer Paratha

  1. Make filling (3 mins, room temp): Mix grated paneer with onion, green chilli, ginger, garam masala, chilli powder, amchur, coriander leaves, ajwain, and ¼ tsp salt. Keep moist but not wet.
  2. Knead dough (3 mins, room temp): Combine flour and salt, add oil, gradually add water to form soft dough. Cover 10 mins.
  3. Divide and fill (5 mins, room temp): Divide into 8 balls, flatten, add 2 tbsp filling, seal edges completely, roll to 6-inch disc.
  4. Flip and ghee (1 min, medium-high heat): Flip, apply ½ tbsp ghee, press lightly.
  5. Second side (2 mins, medium-high heat): Cook until golden, flip once more, add ghee, cook until deep golden spots appear.
