- Blanch spinach in boiling water (95°C) for 3 minutes
- Cool and blend spinach to smooth puree
- Heat oil to 170°C, add cumin seeds, cook 20 seconds
- Add onion, cook 3 minutes until translucent
- Add ginger-garlic, cook 2 minutes
- Add tomato puree, cook 3 minutes
- Add spinach puree, turmeric, salt
- Simmer 8 minutes on low heat (150°C)
- Add garam masala, green chiles
- Gently add paneer cubes, cook 5 minutes
- Add cream and butter, stir gently, cook 2 minutes
- Visual: thick green sauce with paneer; Aroma: earthy spinach, buttery
- Check spinach coats spoon back
