  1. Blanch spinach in boiling water (95°C) for 3 minutes
  2. Cool and blend spinach to smooth puree
  3. Heat oil to 170°C, add cumin seeds, cook 20 seconds
  4. Add onion, cook 3 minutes until translucent
  5. Add ginger-garlic, cook 2 minutes
  6. Add tomato puree, cook 3 minutes
  7. Add spinach puree, turmeric, salt
  8. Simmer 8 minutes on low heat (150°C)
  9. Add garam masala, green chiles
  10. Gently add paneer cubes, cook 5 minutes
  11. Add cream and butter, stir gently, cook 2 minutes
  12. Visual: thick green sauce with paneer; Aroma: earthy spinach, buttery
  13. Check spinach coats spoon back
