- Mix batter (2 mins, room temp): Combine besan, rava, salt, turmeric, gradually add water and curd until smooth batter forms.
- Rest (10 mins, room temp): Cover, rest 10 minutes.
- Prepare topping (2 mins, room temp): Mix sliced onion, green chilli, coriander, garam masala.
- Heat pan (2 mins, medium heat): Heat dosa pan or large tawa, lightly grease with oil, reduce to medium.
- Pour batter (1 min, medium heat): Pour ¼ cup batter, spread to 6-inch circle (thicker than dosa, thinner than cheela).
- Sprinkle topping (1 min, medium heat): Immediately sprinkle generous amount of onion mixture over batter.
- Check edges (30 secs, medium heat): When edges leave pan and color is golden, it is done.
- Serve (1 min, room temp): Remove to plate, serve hot with green chutney or tomato sauce.
