  1. Make dough (10 mins): Mix flour, baking powder, baking soda, sugar, salt. Add yogurt, ghee. Add water, knead soft dough. Rest 30 mins covered.
  2. Prepare filling (3 mins): Mix chopped onions with chili powder, cumin, ajwain, salt, coriander. Squeeze gently to release moisture.
  3. Stuff kulchas (15 mins): Divide dough into 8 portions. Roll one ball thin (6-inch oval). Place 2 tbsp onion filling on one half, fold into triangle or half-moon. Seal edges. Brush water, sprinkle nigella seeds.
  4. Finish: Brush generous ghee on both sides while hot.
  5. Serve: Serve immediately with chole or dal.
