- Make dough (10 mins): Mix flour, baking powder, baking soda, sugar, salt. Add oil, yogurt. Add water gradually, knead into soft dough. Rest 1-2 hours covered (longer rise improves texture).
- Shape naans (10 mins): Divide into 8 portions. Form ball, roll into oval/teardrop shape (7-8 inches). Brush water on top, sprinkle nigella seeds, optional garlic, coriander.
- Finish: Brush ghee on both sides while hot.
- Serve: Serve hot, traditionally with curries.
