👩🍳 How to make Mutton Rogan Josh
- Heat oil (50ml) in a heavy-bottomed pot over medium-high heat (190°C). Add cumin seeds (5g), crackle 15 seconds.
- Add black cardamom (2), cinnamon (2 inch), bay leaves (2). Toast 15 seconds until fragrant.
- Add chopped onions (220g), cook 6 minutes until softened and edges turn golden-brown.
- Add ginger-garlic paste (35g) and green chilies (2), cook 2 minutes until fragrant.
- Add crushed tomatoes (250g), cook 5 minutes until broken down and oil separates.
- Add yogurt (100ml), stir well. Cook 2 minutes.
- Add coriander powder (8g), turmeric (3g), red chili powder (4g), garam masala (5g), stir 1 minute.
- Add mutton cubes (700g), turn to coat evenly with spices. Cook 5 minutes.
- Add water (800ml), bring to boil over high heat (200°C), then reduce to medium (160°C).
- Cover pot, simmer for 45 minutes, stirring occasionally, until meat is tender.
- Remove cover, simmer 5-10 minutes until gravy reduces and coats a spoon. Meat should easily separate from bones.
- Add salt (12g). Taste and adjust spices.
- Remove cardamom pods, cinnamon, and bay leaves if desired.
- Garnish with coriander leaves (20g). Serve hot with naan, roti, or rice.
