👩🍳 How to make Mutton Korma
- Heat oil to 190°C, add cumin seeds, cook 20 seconds
- Add onions, fry 6 minutes until deep golden (170°C)
- Add mutton, cook 10 minutes on high heat to brown (180°C)
- Add ginger-garlic, cook 3 minutes
- Add yogurt slowly, stir well
- Add tomato puree, cook 5 minutes on medium heat
- Add all ground and whole spices
- Pour water, bring to boil (95°C)
- Reduce to low simmer (150°C), pressure cook 30 minutes or simmer 50 minutes
- Check mutton is tender and easily pierced
- Cook uncovered on low for final 10 minutes to reduce gravy
- Visual: tender meat in thick, creamy gravy; Aroma: warm whole spices
- Serve with rice or naan
