👩‍🍳 How to make Mutton Korma

  1. Heat oil to 190°C, add cumin seeds, cook 20 seconds
  2. Add onions, fry 6 minutes until deep golden (170°C)
  3. Add mutton, cook 10 minutes on high heat to brown (180°C)
  4. Add ginger-garlic, cook 3 minutes
  5. Add yogurt slowly, stir well
  6. Add tomato puree, cook 5 minutes on medium heat
  7. Add all ground and whole spices
  8. Pour water, bring to boil (95°C)
  9. Reduce to low simmer (150°C), pressure cook 30 minutes or simmer 50 minutes
  10. Check mutton is tender and easily pierced
  11. Cook uncovered on low for final 10 minutes to reduce gravy
  12. Visual: tender meat in thick, creamy gravy; Aroma: warm whole spices
  13. Serve with rice or naan
