  1. Heat ghee; add whole spices.
  2. Add 450g sliced onions; cook until very dark brown, 18 min.
  3. Add ginger-garlic paste 3 min.
  4. Add mutton; cook until all sides deeply browned.
  5. Add tomatoes; cook until oil surfaces.
  6. Add yoghurt slowly.
  7. Add dry spices.
  8. Add 300ml water.
  9. Cover; braise until mutton is fall-off-bone tender.
  10. Add quartered onions; cook on high heat 5 minutes.
  11. Add garam masala.
  12. Onions should be lightly caramelised but not fully soft.
