- Heat oil to 190°C, add cumin seeds, cook 20 seconds
- Add onion, fry 4 minutes until golden (170°C)
- Add ginger-garlic, cook 2 minutes
- Add chicken, cook 8 minutes on medium-high heat until sealed (180°C)
- Add tomato puree, cook 5 minutes
- Add all spices and salt
- Pour water, bring to boil (95°C)
- Reduce to low simmer (150°C), cook 12 minutes
- Add peas, cook 5 more minutes
- Check chicken reaches 75°C internal
- Visual: tender chicken with peas in thick gravy; Aroma: warm spices
- Garnish with coriander leaves
- Serve with rice or bread
