👩🍳 How to make Moti Chikhalwali
- Dry roast sesame seeds at 170°C for 4 minutes
- Heat ghee to 160°C
- Add roasted sesame, stir 2 minutes
- Boil water with sugar to 107°C (thread consistency, hard ball)
- Add hot syrup to sesame slowly
- Add cardamom powder
- Cook 2 minutes on low heat (150°C), stirring constantly
- Remove from heat, cool 2 minutes
- Drop spoonful portions on parchment paper
- Each drop should be pearl-sized
- Set 1 hour at room temperature
- Visual: golden-brown, crunchy pearls
- Store in dry container
