  1. Dry roast sesame seeds at 170°C for 4 minutes
  2. Heat ghee to 160°C
  3. Add roasted sesame, stir 2 minutes
  4. Boil water with sugar to 107°C (thread consistency, hard ball)
  5. Add hot syrup to sesame slowly
  6. Add cardamom powder
  7. Cook 2 minutes on low heat (150°C), stirring constantly
  8. Remove from heat, cool 2 minutes
  9. Drop spoonful portions on parchment paper
  10. Each drop should be pearl-sized
  11. Set 1 hour at room temperature
  12. Visual: golden-brown, crunchy pearls
  13. Store in dry container
