  1. Prepare vegetables (10 mins): Cut all vegetables into thin, even pieces. Pat completely dry with paper towels.
  2. Make batter (3 mins): Mix besan, rice flour, salt, ginger, ajwain, green chilies, coriander, spices. Add water gradually until thick coating consistency.
  3. Toss vegetables (3 mins): Combine all prepared vegetables. Pour batter over vegetables, mix gently until all pieces are coated.
  4. Heat oil (1 min): Oil 350°F (175°C). Test with small batter.
  5. Fry pakoras (12 mins, medium heat): Drop small spoonfuls (about 2 tbsp each) of vegetable mix into oil (batches of 8-10). Fry 10-12 mins, turning occasionally every 2-3 mins. Pakoras should be golden-brown, crispy, vegetables tender inside. Transfer to paper towels.
  6. Garnish (1 min): Sprinkle chaat masala while warm.
