  1. Make dough (5 mins): Mix cornmeal, wheat flour, salt. Add 1 tbsp ghee, rub breadcrumb texture. Add warm water gradually, knead into soft dough (dough will be slightly crumbly due to cornmeal—this is normal). Rest 5 mins covered.
  2. Shape rotis (10 mins): Divide into 6 portions. Oil hands lightly. Form ball, flatten slightly. Place on plastic wrap or between two plastic sheets. Roll into thin circle (8 inches diameter)—cornmeal is fragile, rolling between plastic prevents cracking.
  3. Finish: Brush ghee on both sides while hot.
  4. Serve: Serve hot with sarso ka saag (mustard greens curry) or any curry. Makki roti pairs traditionally with winters and saag.
