- Make dough (5 mins): Mix cornmeal, wheat flour, salt. Add 1 tbsp ghee, rub breadcrumb texture. Add warm water gradually, knead into soft dough (dough will be slightly crumbly due to cornmeal—this is normal). Rest 5 mins covered.
- Shape rotis (10 mins): Divide into 6 portions. Oil hands lightly. Form ball, flatten slightly. Place on plastic wrap or between two plastic sheets. Roll into thin circle (8 inches diameter)—cornmeal is fragile, rolling between plastic prevents cracking.
- Finish: Brush ghee on both sides while hot.
- Serve: Serve hot with sarso ka saag (mustard greens curry) or any curry. Makki roti pairs traditionally with winters and saag.
