👩🍳 How to make Kulfi
- Reduce milk (20 mins, medium-high heat): Pour 1 liter milk into heavy-bottomed pan. Bring to boil. Reduce heat to medium, simmer uncovered 15-20 mins, stirring occasionally. Milk should reduce to about ¼ original volume (to 250 ml)—should be thick, creamy, slightly brown.
- Add ingredients (3 mins): Add ½ cup milk powder, ½ cup sugar, ¼ cup condensed milk. Stir until combined. Cool to room temperature (about 15 mins).
- Add flavorings (1 min): Add cardamom powder, saffron, rose extract (if using), nuts, raisins. Mix well.
- Set molds (3 mins): Pour into kulfi molds or small kulfi cups. Insert sticks if using. Cover tops.
- Freeze (6-8 hours or overnight): Place in freezer until solid (at least 6-8 hours, preferably overnight).
