- Oil and rest (30 mins, room temp): Oil dough surface, cover with moist cloth, rest 30 minutes.
- Prepare filling (2 mins, room temp): Mix grated potato with spices until well-combined and thick.
- Divide and stuff (4 mins, room temp): Divide dough into 10 portions, stuff with potato filling, seal edges.
- Roll (3 mins, room temp): Roll stuffed dough uniformly to disc shape.
- Apply toppings (1 min, room temp): Apply water on back, sprinkle kalonji seeds, sesame seeds, cilantro.
