  1. Combine dry ingredients (1 min, room temp): Mix maida, baking powder, baking soda, sugar, salt.
  2. Add wet ingredients (2 mins, room temp): Add yogurt and ghee, knead with water into smooth, soft dough.
  3. Oil and rest (30 mins, room temp): Oil dough surface, cover with moist cloth, rest 30 minutes.
  4. Prepare filling (2 mins, room temp): Mix grated potato with spices until well-combined and thick.
  5. Divide and stuff (4 mins, room temp): Divide dough into 10 portions, stuff with potato filling, seal edges.
  6. Roll (3 mins, room temp): Roll stuffed dough uniformly to disc shape.
  7. Apply toppings (1 min, room temp): Apply water on back, sprinkle kalonji seeds, sesame seeds, cilantro.
  8. Flame cook (1 min, open flame): Alternatively, hold kulcha with tongs directly over open flame for char (15-20 secs per side).
