  1. Roast rice (3 mins, medium heat): In heavy pan, heat 1 tbsp ghee. Add ¼ cup rice, roast 2-3 mins, stirring—rice should be light golden, aromatic.
  2. Reduce milk (20 mins, medium heat): Add 1 liter milk to roasted rice. Bring to boil. Reduce heat to medium, simmer uncovered 15-18 mins, stirring occasionally. Rice should be tender, milk should reduce.
  3. Add sugar (1 min): Add ½ cup sugar, stir until dissolved.
  4. Fry nuts & raisins (3 mins): In separate pan, heat 2 tbsp ghee. Fry cashews until golden (1 min), fry raisins until plump (30 secs). Remove with spoon.
  5. Finish kheer (2 mins, medium heat): Add cardamom powder, saffron strands, salt to kheer. Fold in fried nuts and raisins.
