👩🍳 How to make Kheer
- Rinse rice until water runs clear
- Soak rice 20 minutes in 150ml water
- Heat ghee to 160°C in heavy-bottom pan
- Add soaked rice, stir 3 minutes
- Add milk, bring to boil (95°C)
- Stir occasionally, reduce to low heat (140°C)
- Cook 35-40 minutes until milk reduces to 1/2 original volume
- Stir in sugar, crushed cardamom
- Cook 5 more minutes
- Rice grains should be soft and partially dissolved
- Add rose water, saffron strands
- Add nuts and raisins in final 1 minute
- Visual: thick, creamy pudding; Aroma: cardamom, rose water, ghee
- Remove from heat, cool to 50-60°C
- Serve warm in bowls
