👩‍🍳 How to make Kheer

  1. Rinse rice until water runs clear
  2. Soak rice 20 minutes in 150ml water
  3. Heat ghee to 160°C in heavy-bottom pan
  4. Add soaked rice, stir 3 minutes
  5. Add milk, bring to boil (95°C)
  6. Stir occasionally, reduce to low heat (140°C)
  7. Cook 35-40 minutes until milk reduces to 1/2 original volume
  8. Stir in sugar, crushed cardamom
  9. Cook 5 more minutes
  10. Rice grains should be soft and partially dissolved
  11. Add rose water, saffron strands
  12. Add nuts and raisins in final 1 minute
  13. Visual: thick, creamy pudding; Aroma: cardamom, rose water, ghee
  14. Remove from heat, cool to 50-60°C
  15. Serve warm in bowls
