👩🍳 How to make Kesar Kulfi
- Heat milk to 95°C in pan
- Reduce to low heat (140°C), cook 30 minutes to reduce 1/3
- Soak saffron in 30ml warm milk (50°C) for 5 minutes
- Add condensed milk, cream to reduced milk
- Add saffron with soaking milk
- Add crushed cardamom, rose water
- Add ghee, fold in gently
- Cool to room temperature
- Pour into kulfi molds or small cups
- Insert wooden sticks
- Freeze 6 hours until solid at -18°C
- To serve: dip mold in warm water 10 seconds, push out
- Visual: pale saffron, creamy texture
- Serve immediately
