👩‍🍳 How to make Kesar Kulfi

  1. Heat milk to 95°C in pan
  2. Reduce to low heat (140°C), cook 30 minutes to reduce 1/3
  3. Soak saffron in 30ml warm milk (50°C) for 5 minutes
  4. Add condensed milk, cream to reduced milk
  5. Add saffron with soaking milk
  6. Add crushed cardamom, rose water
  7. Add ghee, fold in gently
  8. Cool to room temperature
  9. Pour into kulfi molds or small cups
  10. Insert wooden sticks
  11. Freeze 6 hours until solid at -18°C
  12. To serve: dip mold in warm water 10 seconds, push out
  13. Visual: pale saffron, creamy texture
  14. Serve immediately
