- Heat oil to 190°C, add cumin seeds, cook 20 seconds
- Add onion, fry 4 minutes until golden (170°C)
- Add ginger-garlic, cook 2 minutes
- Add ground meat, cook 8 minutes on medium-high heat, breaking lumps (180°C)
- Meat should brown and release oil
- Add tomato puree, cook 5 minutes
- Add chili powder, coriander, garam masala, salt
- Add peas and green chiles, cook 3 minutes on low heat (160°C)
- Check meat is fully cooked, gravy is thick
- Visual: no liquid remaining, meat mixed with peas; Aroma: warm, meat spices
- Garnish with coriander leaves
- Serve with rice or naan
