  1. Heat oil to 190°C, add cumin seeds, cook 20 seconds
  2. Add onion, fry 4 minutes until golden (170°C)
  3. Add ginger-garlic, cook 2 minutes
  4. Add ground meat, cook 8 minutes on medium-high heat, breaking lumps (180°C)
  5. Meat should brown and release oil
  6. Add tomato puree, cook 5 minutes
  7. Add chili powder, coriander, garam masala, salt
  8. Add peas and green chiles, cook 3 minutes on low heat (160°C)
  9. Check meat is fully cooked, gravy is thick
  10. Visual: no liquid remaining, meat mixed with peas; Aroma: warm, meat spices
  11. Garnish with coriander leaves
  12. Serve with rice or naan
