👩‍🍳 How to make Kadhi Pakora + Rice

  1. Mix pakora batter (thick).
  2. Fry spoonfuls in hot oil until golden.
  3. Drain.
  4. Whisk yoghurt with besan, turmeric, salt, and 1 litre water until smooth.
  5. Heat in a pot, stirring constantly.
  6. Once it begins to boil, reduce to low and simmer 25 minutes stirring every 5 minutes — kadhi thickens and turns golden.
  7. Add kasuri methi.
  8. Slide in pakoras.
  9. Simmer gently — pakoras absorb kadhi and swell.
  10. Do not stir vigorously or they will break.
  11. Heat ghee; add mustard seeds, cumin, hing, dried chillies, garlic until dark.
  12. Pour over kadhi sizzling.
