👩🍳 How to make Jaggery & Til Laddu
- Roast sesame (5 mins, medium-low heat): Toast sesame seeds 4-5 mins in pan, stirring constantly—seeds should be golden, aromatic.
- Melt jaggery (3 mins, medium-high heat): In separate pan, heat ½ cup jaggery, 1 tbsp ghee. Stir constantly until melted, bubbling (3 mins).
- Combine (1 min): Pour melted jaggery into roasted sesame, add cardamom, salt. Stir rapidly 10-15 secs until combined.
- Shape laddus (10 mins): While warm, oil hands. Take 1 tbsp mixture, roll into ball quickly (mixture hardens fast). Place on plate to cool completely.
- Store: Airtight, lasts 1 week.
