👩🍳 How to make Jaggery Puri
- Make dough (10 mins): Mix flour, salt. Add ¼ cup ghee, rub breadcrumbs. Add ¼ cup water, knead soft dough. Rest 10 mins.
- Melt jaggery (2 mins, medium heat): In pan, heat ½ cup jaggery, 2 tbsp ghee. Stir until jaggery melts, becomes syrupy (don't let it harden). Cool slightly, add cardamom powder.
- Stuff puris (10 mins): Roll dough into thin circles (3-inch diameter). Place 1 tsp jaggery mixture in center, fold into half-moon, seal edges firmly.
- Deep fry (8 mins, medium heat): Heat oil to 350°F (175°C). Fry stuffed puris in batches 5-6 mins, turning halfway—golden, crispy on both sides.
- Serve: Drain on paper towels. Serve warm, drizzle extra ghee on top.
