  1. Roast flour (8 mins, medium heat): Heat ½ cup ghee in heavy pan. Add 1 cup wheat flour, roast on medium-low heat 6-8 mins, stirring constantly—flour should turn light brown, aromatic (don't over-roast—becomes bitter). Cool 1 min.
  2. Add water (8 mins, medium heat): Carefully add 1¼ cup water (it will splutter). Stir immediately to prevent lumps. Cook on medium heat 5-6 mins, stirring constantly—halwa should thicken, bubbles should form on surface.
  3. Add sugar (2 mins, medium heat): Add ½ cup sugar, stir until dissolved (1 min). Cook 1 more min, stirring.
  4. Add nuts (1 min): Fold in cashews, raisins, cardamom powder, salt gently.
