👩🍳 How to make Halwa Puri
- Fry semolina (5 mins, medium-low heat): Heat ½ cup ghee in pan. Add 1 cup semolina, roast on medium-low heat 3-4 mins, stirring constantly—semolina should be light golden, aromatic. Cool 1 min.
- Fry nuts (2 mins): In separate pan, heat 1 tbsp ghee. Fry cashews until golden (1 min), fry raisins (30 secs).
- Add water (3 mins, medium heat): Carefully add 1¾ cups water to roasted semolina (will splutter). Stir immediately. Cook 2-3 mins on medium heat—mixture should come together.
- Add sweetener (5 mins, medium heat): Add ½ cup jaggery or sugar, stir until dissolved. Continue cooking 3-4 mins, stirring constantly. Halwa should thicken, leave ghee trail.
- Finish halwa (1 min): Fold in fried nuts and raisins, cardamom powder.
- Prepare puris (simultaneously or ahead): Make puri dough (rest 15 mins), roll, fry.
- Serve: Traditionally, warm halwa is served alongside hot puris on same plate.
