  1. Heat oil to 190°C, add cumin seeds, cook 20 seconds
  2. Add sliced onions, fry 5 minutes until golden (170°C)
  3. Add ginger-garlic paste, cook 2 minutes
  4. Add chicken, cook 8 minutes on medium-high heat to seal (180°C)
  5. Add tomato puree, cook 5 minutes on medium heat
  6. Add chili powder, garam masala, salt
  7. Add half the julienned ginger, pour water
  8. Bring to boil (95°C), simmer 12 minutes on low heat (160°C)
  9. Add remaining ginger and green chiles
  10. Cook 3 more minutes
  11. Check chicken reaches 75°C internal
  12. Visual: tender chicken with bright ginger strands; Aroma: fresh ginger dominates
  13. Garnish with coriander leaves
