  1. Prepare garlic (5 mins): Peel garlic cloves (about 30). Blanch in boiling water for 1 min (softens slightly, removes harsh edge). Drain completely, pat dry with paper towels.
  2. Make batter (3 mins): Mix besan, rice flour, salt, turmeric, chili powder, garam masala, ajwain, coriander. Add water gradually until thick, coating consistency.
  3. Coat garlic (3 mins): Dip each garlic clove into batter, coat completely. Place on tray.
  4. Heat oil (1 min): Oil 350°F (175°C). Test with batter.
  5. Fry pakoras (10 mins, medium heat): Place coated garlic into oil (batches of 12-15 cloves). Fry 8-10 mins, stirring gently every 2 mins. Cloves should be golden, crispy exterior, soft inside. Transfer to paper towels.
  6. Garnish (1 min): Sprinkle chaat masala while warm.
