- Grate carrots (10 mins): Wash, peel, and finely grate carrots using food processor (visual cue: fine, even strands).
- Dry roast nuts (5 mins, medium heat): Roast nuts until crunchy, cool, chop and set aside.
- Evaporate milk (20 mins, medium heat): Continue cooking until milk completely evaporates and carrots are soft (visual cue: no liquid remaining, carrots appear moist but not wet).
- Add sugar (5 mins, medium heat): Mix in sugar as it releases moisture, stir well.
- Add ghee & brown (10 mins, medium heat): When half moisture is gone, add ghee and sauté until halwa thickens and becomes aromatic (visual cue: mixture becomes dense, turns light brown, fills kitchen with sweet carrot smell).
