👩🍳 How to make Gajjar Pak
- Heat ghee to 170°C in heavy pan
- Add grated carrots, roast 8 minutes stirring constantly
- Carrots should turn darker, release sweet aroma
- Make sugar syrup: boil water with sugar to 104°C
- Add hot syrup to carrots slowly, stir well
- Cook 10 minutes on low heat (150°C), stirring constantly
- Mixture should thicken and leave pan sides
- Add cardamom powder, nuts
- Pour onto greased tray lined with parchment
- Flatten to 1.5cm thickness with wet spatula
- Cool to room temperature (1 hour)
- Cut into squares or diamonds
- Visual: golden-brown brittle with visible nuts
- Store in airtight container
