👩‍🍳 How to make Gajjar Pak

  1. Heat ghee to 170°C in heavy pan
  2. Add grated carrots, roast 8 minutes stirring constantly
  3. Carrots should turn darker, release sweet aroma
  4. Make sugar syrup: boil water with sugar to 104°C
  5. Add hot syrup to carrots slowly, stir well
  6. Cook 10 minutes on low heat (150°C), stirring constantly
  7. Mixture should thicken and leave pan sides
  8. Add cardamom powder, nuts
  9. Pour onto greased tray lined with parchment
  10. Flatten to 1.5cm thickness with wet spatula
  11. Cool to room temperature (1 hour)
  12. Cut into squares or diamonds
  13. Visual: golden-brown brittle with visible nuts
  14. Store in airtight container
