👩‍🍳 How to make Gajar Ka Halwa

  1. Prepare carrots (5 mins): Peel red carrots. Grate on fine grater—carrots should be fine shreds, uniform size.
  2. Reduce milk (15 mins, medium-high heat): Pour 1 liter milk into heavy-bottomed pan. Bring to boil (5 mins). Add grated carrots, stir. Reduce heat to medium, let cook uncovered 10 mins, stirring occasionally—milk should reduce slightly, carrots should soften and darken (carrots absorb milk).
  3. Add sweetness (3 mins, medium heat): Add ½ cup sugar, stir until dissolved (1 min). Add cardamom powder, saffron strands, salt. Cook 2 more mins, stirring constantly.
  4. Fry nuts (3 mins): In separate pan, heat 1 tbsp ghee, fry cashews until golden (1 min), fry raisins until plump (30 secs). Remove with spoon, set aside.
  5. Final cook (2 mins): Fold fried nuts into halwa. Stir continuously 1-2 mins—halwa should leave oil trail when spoon is pulled through, should be thick, rich, glossy.
