- Heat ghee to 160°C in heavy-bottom pan
- Add grated carrots, sauté 5 minutes, stirring constantly
- Add milk, bring to boil (95°C)
- Reduce to low heat (140°C), stir frequently
- Cook 30-35 minutes until milk evaporates (90% reduction)
- Add sugar, stir well, continue cooking 8 minutes on low heat
- Add cardamom powder in final 2 minutes
- Fold in nuts and raisins in final 1 minute
- Visual: thick, reddish-orange paste; Aroma: cardamom-ghee dominates
- Check: should not stick to pan bottom
