  1. Heat ghee to 160°C in heavy-bottom pan
  2. Add grated carrots, sauté 5 minutes, stirring constantly
  3. Add milk, bring to boil (95°C)
  4. Reduce to low heat (140°C), stir frequently
  5. Cook 30-35 minutes until milk evaporates (90% reduction)
  6. Add sugar, stir well, continue cooking 8 minutes on low heat
  7. Add cardamom powder in final 2 minutes
  8. Fold in nuts and raisins in final 1 minute
  9. Visual: thick, reddish-orange paste; Aroma: cardamom-ghee dominates
  10. Check: should not stick to pan bottom
  11. Serve warm at 60°C, topped with extra nuts
