👩‍🍳 How to make Gajak

  1. Prepare peanuts (2 mins): If using raw peanuts, dry roast in pan 5 mins on medium heat until fragrant, golden. If using roasted, have ready.
  2. Prepare pan (2 mins): Grease shallow metal pan or foil with ½ tsp ghee. Set beside stove.
  3. Melt jaggery (5 mins, medium-high heat): Add ¾ cup jaggery, ½ tbsp ghee to heavy pan. Heat medium-high, stirring. Jaggery melts, browns (5 mins). Monitor—jaggery burns quickly. Test: drop tiny bit in cold water; if hard-crack stage (hard, snaps), ready.
  4. Combine ingredients (1 min): Remove from heat. Add peanuts, salt, cardamom. Stir rapidly 10-15 secs—peanuts coat evenly, mixture becomes thick.
  5. Set on pan (2 mins): Pour onto greased pan. Flatten with greased spoon. Cool 5-10 mins until hard.
  6. Break & store (5 mins): Break into pieces. Store in airtight container 1-2 weeks.
