  1. Soak dal and rajma 8-10 hours separately
  2. Pressure cook together with water for 30 minutes on medium heat (100°C chamber)
  3. Heat butter to 180°C, tempering: add cumin seeds, cook 30 seconds
  4. Add ginger-garlic paste, cook 2 minutes until golden aroma releases
  5. Add onion, sauté until golden-brown (5 minutes at medium heat 170°C)
  6. Add tomato puree, cook 15 minutes stirring occasionally
  7. Pour cooked dal into tomato gravy
  8. Add garam masala, chili powder, salt
  9. Simmer on low heat (140°C) 30-40 minutes
  10. Stir in cream and butter, cook 5 minutes
  11. Sprinkle kasuri methi, final simmer 2 minutes
  12. Visual: deep brown, creamy; Aroma: buttery, spiced lentils
