- Soak dal and rajma 8-10 hours separately
- Pressure cook together with water for 30 minutes on medium heat (100°C chamber)
- Heat butter to 180°C, tempering: add cumin seeds, cook 30 seconds
- Add ginger-garlic paste, cook 2 minutes until golden aroma releases
- Add onion, sauté until golden-brown (5 minutes at medium heat 170°C)
- Add tomato puree, cook 15 minutes stirring occasionally
- Pour cooked dal into tomato gravy
- Add garam masala, chili powder, salt
- Simmer on low heat (140°C) 30-40 minutes
- Stir in cream and butter, cook 5 minutes
- Sprinkle kasuri methi, final simmer 2 minutes
- Visual: deep brown, creamy; Aroma: buttery, spiced lentils
