👩‍🍳 How to make Chole Bhature

  1. Chole: Heat oil (50ml) in a pressure cooker over medium-high heat (190°C). Add cumin seeds (5g), let them crackle for 15 seconds.
  2. Add chopped onions (200g), cook for 4 minutes stirring until translucent and edges turn golden-brown.
  3. Add ginger-garlic paste (30g) and minced green chilies (2). Cook 2 minutes until fragrant.
  4. Add crushed tomatoes (250g), cook 3 minutes until tomatoes break down and oil starts separating from mixture.
  5. Add coriander powder (10g), turmeric (3g), red chili powder (5g), and garam masala (5g). Stir for 1 minute.
  6. Add soaked chickpeas (400g) and water (800ml). Close pressure cooker lid. Cook on high pressure for 20 minutes. Let pressure release naturally for 5 minutes.
  7. Open cooker, add salt (10g). Simmer uncovered for 5 minutes. Chole should be soft and gravy should coat the back of a spoon.
  8. Bhature: Mix maida (400g), baking powder (5g), salt (7g), sugar (5g) in a bowl. Add yogurt (120ml) and mustard oil (20ml). Gradually add water (120ml) while kneading until soft, elastic dough forms.
  9. Cover dough with damp cloth. Let it rest at room temperature for 30 minutes for fermentation.
  10. Divide dough into 8 equal balls. Roll each ball into a 6-inch disc (thickness 1/4 inch).
  11. Heat oil (400ml) in a deep pan to 185°C (oil should be hot enough that a small bread piece sizzles immediately).
  12. Gently slide bhature into hot oil. Fry for 2-3 minutes until it puffs up and bottom turns golden-brown. Flip and fry another 1-2 minutes until both sides are light golden and crispy.
  13. Drain on paper towels. Serve hot with warm chole, onion slices, and mango pickle.
