  1. Prepare chickpeas (5 mins): Soak whole chickpeas (with skin) overnight. Drain, rinse well. Pat completely dry with paper towels—moisture prevents crispness.
  2. Dry roast (15 mins, medium heat): Heat 2 tbsp oil in large pan. Add dried chickpeas, spread in single layer. Roast on medium heat 12-15 mins, stirring frequently. Chickpeas should turn brown, outer skin becomes crispy (some skins will pop off—this is normal).
  3. Season (5 mins, medium heat): Add cumin seeds (crackle 30 secs). Add chili powder, salt, chaat masala, mango powder. Stir constantly 2 mins—seasonings coat chickpeas evenly.
  4. Cool completely (5 mins): Remove from heat, spread on plate. Cool completely—chickpeas become extra crispy as they cool.
  5. Store: Airtight container, lasts 5-7 days.
